Recipe Thursday: How to Make Liberian Jollof Rice

Africa is the home of very delicious, classic and even spiritual meals. At ILoveAfrica, we love to share very exotic meal recipes from all over the continent, and today we have Liberian Jollof Rice. Jollof rice is a popular west African meal with variations according to country. This is how to make the Liberian Variation of this popular meal.
Ingredients For Liberian Jollof Rice
1/2 c. vegetable oil
1 lb chicken, shrimp, fish or other meat 3-4 c. water or stock
1/2 c. onion, finely chopped
4 cloves garlic
1/2 c. green or red pepper, finely chopped 2 cups long grain rice
1 6-oz. can tomato paste
1 16 oz can tomatoes, diced
2 chopped carrots
1 c. green beans

1T.salt
1/2 tsp. black pepper

1 tsp. crushed red pepper or fresh chilies

Vegetable options: you can also add any or all of the following: mushrooms, eggplant, squash
