How to Prepare Isombe, a Rwandan Delicacy

Isombe is a popular Rwandan dish that is made from mashed cassava leaves combined with other ingredients like peanut butter, tomatoes, and onions and this meal can be served with rice or beans.

Ingredients

  • chopped cassava leaves
  • chopped spinach
  • large eggplant
  • cabbage
  • tomatoes
  • onions
  • cilantro
  • garlic
  • seasoning powder
  • black pepper
  • garlic powder
  • salt
  • peanut butter
  • palm oil

Instructions

  1. Cut up all of the vegetables.
  2. Meanwhile, bring 6 cups of water to a boil with the soup bones and other ingredients.
  3. When the water begins to boil, add the cassava leaves and all of the vegetables except the tomatoes.
  4. When the water has nearly completely evaporated, add the palm oil and continue to heat and boil until the oil has almost completely evaporated.
  5. Boil until almost dry, then add diced tomatoes.
  6. Finally, stir in the peanut butter.
